These ingredients give a unique flavor, taste and aroma to build a perfect soup.<\/span><\/span><\/p><p>\u00a0<\/p><p><span style=\"color: #000000;\">There are various soup categories which are mentioned below:<\/span><\/p><p><span style=\"color: #000000;\"><strong>\u00a0<\/strong><\/span><\/p><p><span style=\"color: #000000;\"><strong>Broths<\/strong><\/span><\/p><p><span style=\"color: #000000;\">The term broth and bouillon can be used interchangeably. Broths are among the simplest soups to prepare. Normally, their flavor comes from long-simmering of a variety of ingredients together in one pot. An assortment of separately cooked foods may be added at various times during the cooking requirements of the individual items. All the ingredients should finish cooking at the same time.<\/span><\/p><p><span style=\"color: #000000;\"><strong>Consomme<\/strong><\/span><\/p><p><span style=\"color: #000000;\">This is concentrated, a thin, clear soup made from meat, poultry or fish. The word has the same origin as consummate, meaning to bring to completion or perfection. A consomm\u00e9 is cooked long enough for most of the ingredients to be extracted into the liquid. In the most general sense, consomm\u00e9 is a meat, poultry or fish stock, which has gone through a special clarification process, served hot or cold.<\/span><\/p><p><span style=\"color: #000000;\"><strong>Purees<\/strong><\/span><\/p><p><span style=\"color: #000000;\">They are slightly thicker than cream soups &amp; are somewhat coarser in texture. They are normally based on dried peas, lentils or starchy vegetables, such as potatoes &amp; carrots.<\/span><\/p><p><span style=\"color: #000000;\"><strong>Cream Soups<\/strong><\/span><\/p><p><span style=\"color: #000000;\">Cream soups are based on b\u00e9chamel sauces.<\/span><\/p><p><span style=\"color: #000000;\"><strong>Chowders<\/strong><\/span><\/p><p><span style=\"color: #000000;\">Thick soup resembling a stew made with meat or fish and vegetables, often flavored with cheese.<\/span><\/p><p><span style=\"color: #000000;\"><strong>Bisque<\/strong><\/span><\/p><p><span style=\"color: #000000;\">These are traditionally based on such crustaceans such as shrimp, lobster &amp; crayfish. These share characteristics with both purees &amp; cream soups.<\/span><\/p><p><span style=\"color: #000000;\"><strong>Veloute<\/strong><\/span><\/p><p><span style=\"color: #000000;\">A veloute is based on a light veloute sauce, a sauce thickened with roux &amp; finished with a liaison of egg yolk &amp; cream.<\/span><\/p><p><span style=\"color: #000000;\"><strong>Vegetable Soups<\/strong><\/span><\/p><p><span style=\"color: #000000;\">Any soup containing one or more vegetables, cut in dice, brunoise, julienne, chiffonade or paysanne and eaten with the liquid they have flavored, is classified as vegetable soup or potage.<\/span><\/p><p><span style=\"color: #000000;\"><strong>Cold Soups<\/strong><\/span><\/p><p><span style=\"color: #000000;\">This is a special category because this grouping of soups is served differently<\/span><br \/><span style=\"color: #000000;\">from any other: Well chilled, in chilled cups or bowls. The popularity of cold<\/span><br \/><span style=\"color: #000000;\">soup has recently increased. Many soups that are prepared to be a hot soup can<\/span><br \/><span style=\"color: #000000;\">be changed into a cold soup by simply chilling them well and making minor<\/span><br \/><span style=\"color: #000000;\">alterations to the structure and flavor. For instance, many purees can be served<\/span><br \/><span style=\"color: #000000;\">chilled if they are made with little or no butter and thinned with cream after<\/span><br \/><span style=\"color: #000000;\">chilling.<\/span><\/p><p><span style=\"color: #000000;\"><strong>International Soups<\/strong><\/span><\/p><ul><li><span style=\"color: #000000;\">Gazpacho \u2013 Spain<\/span><\/li><li><span style=\"color: #000000;\">Mulligatawny \u2013 India<\/span><\/li><li><span style=\"color: #000000;\">Chicken Broth \u2013 England<\/span><\/li><li><span style=\"color: #000000;\">Cockie Leekie \u2013 Scotland<\/span><\/li><li><span style=\"color: #000000;\">Clam Chowder \u2013 U.S.A<\/span><\/li><li><span style=\"color: #000000;\">Bortsch \u2013 Russia<\/span><\/li><li><span style=\"color: #000000;\">Beer soup \u2013 Germany<\/span><\/li><li><span style=\"color: #000000;\">French Onion Soup \u2013 France<\/span><\/li><li><span style=\"color: #000000;\">Minestrone \u2013 Italian.<\/span><\/li><\/ul><p><span style=\"color: #000000;\"><strong>Special Points for the Service and Preparation<\/strong><\/span><\/p><ul><li><span style=\"color: #000000;\">The first-class, clean, strong and flavourful stock should be used, as it would help in producing good quality soup.<\/span><\/li><li><span style=\"color: #000000;\">If there is a heavy entr\u00e9e, the soup should be thin or light.<\/span><\/li><li><span style=\"color: #000000;\">If the heavy soup is served, the portion should be small.<\/span><\/li><li><span style=\"color: #000000;\">The soups should not in any way be filling or consist of food particles that require much chewing<\/span><\/li><li><span style=\"color: #000000;\">The garnish should be small and dainty so that they can be picked up easily by soup-spoon.<\/span><\/li><li><span style=\"color: #000000;\">Soups should be always moderately seasoned.<\/span><\/li><li><span style=\"color: #000000;\">Serve hot soups;
