It is the milk protein in the whey that makes butter spoil quickly.<\/span><\/li><li><span style=\"color: #000000;\">Most of the butter is made from cow\u2019s milk but other are some butter made from the milk of buffalo, yak, goat and sheep is also available.<\/span><\/li><\/ul><p><span style=\"color: #000000;\">Butter is a water-in-oil\u00a0emulsion\u00a0resulting from an inversion of the cream; in a water-in-oil emulsion, the milk proteins are the emulsifiers. It can be salted or unsalted. It is soft, creamy texture and a creamy buttery taste.<\/span><\/p><p><span style=\"color: #000000;\"><strong>Lactic butter:<\/strong>\u00a0this type of butter specially made in Denmark, Holland and france. The cream is mostly pasteurized, inoculated with a culture that ripens the butter, then pasteurized once more to arrest the ripening process.<\/span><\/p><h3><span style=\"color: #000000;\">Uses of Butter<\/span><\/h3><ul><li><span style=\"color: #000000;\">As a spread for bread, toast and scones<\/span><\/li><li><span style=\"color: #000000;\">As a basic ingredient in pastry-making and cake-making.<\/span><\/li><li><span style=\"color: #000000;\">Used as an accompaniment (compound butter).<\/span><\/li><li><span style=\"color: #000000;\">To enhance the taste and flavour of soups and sauces.<\/span><\/li><li><span style=\"color: #000000;\">As a cooking medium (The smoke point of butterfat is only 127-130\u00b0C; so a vegetable oil should be used when high cooking temperatures are required).<\/span><\/li><li><span style=\"color: #000000;\">For butter sculptures.<\/span><\/li><\/ul><h4><span style=\"color: #000000;\">Notes: Few other types of butter commonly used.<\/span><\/h4><p><span style=\"color: #000000;\"><strong>Unsalted butter \/sweet butter<\/strong>\u2013 it has a mild aroma and slightly sweet flavour, used for making sweet pastries and cakes.<\/span><\/p><p><span style=\"color: #000000;\"><strong>Salted butter \u2013\u00a0<\/strong>butter was originally salted to preserve it for the winter months when fresh butter was not made.
