Supplies can be found commercially as unadulterated fresh produce or preserved, typically in a light\u00a0<a style=\"color: #000000;\" href=\"https:\/\/en.wikipedia.org\/wiki\/Brine\">brine<\/a>.<\/span><\/p><p><span style=\"color: #000000;\"><strong><u>1. AROMA &amp; PREPARATION OF DISHES<\/u><\/strong><\/span><\/p><p><span style=\"color: #000000;\">As the volatile aromas dissipate quicker when heated, truffles are generally served raw and shaved over warm, simple foods where their flavour will be highlighted, such as buttered\u00a0<a style=\"color: #000000;\" href=\"https:\/\/en.wikipedia.org\/wiki\/Pasta\">pasta<\/a>\u00a0or\u00a0<a style=\"color: #000000;\" href=\"https:\/\/en.wikipedia.org\/wiki\/Egg\">eggs<\/a>. Thin truffle slices may be inserted into\u00a0<a style=\"color: #000000;\" href=\"https:\/\/en.wikipedia.org\/wiki\/Meat\">meats<\/a>, under the skins of roasted\u00a0<a style=\"color: #000000;\" href=\"https:\/\/en.wikipedia.org\/wiki\/Fowl\">fowl<\/a>, in\u00a0<a style=\"color: #000000;\" href=\"https:\/\/en.wikipedia.org\/wiki\/Foie_gras\"><em>foie gras<\/em><\/a>\u00a0preparations, in\u00a0<a style=\"color: #000000;\" href=\"https:\/\/en.wikipedia.org\/wiki\/P%C3%A2t%C3%A9\"><em>p\u00e2t\u00e9s<\/em><\/a>, or in\u00a0<a style=\"color: #000000;\" href=\"https:\/\/en.wikipedia.org\/wiki\/Stuffing\">stuffing<\/a>. Some specialty\u00a0<a style=\"color: #000000;\" href=\"https:\/\/en.wikipedia.org\/wiki\/Cheese\">cheeses<\/a>\u00a0contain truffles, as well. Truffles are also used for producing truffle salt and truffle honey.<\/span><\/p><p><span style=\"color: #000000;\">While chefs once peeled truffles, in modern times, most restaurants brush the truffle carefully and shave it or dice it with the skin on so as to make the most of the valuable ingredient. Some restaurants stamp out circular discs of truffle flesh and use the skins for sauces.<\/span><\/p><p><span style=\"color: #000000;\"><strong><u>2. TRUFFLE OIL<\/u><\/strong><\/span><\/p><p><span style=\"color: #000000;\"><a style=\"color: #000000;\" href=\"https:\/\/en.wikipedia.org\/wiki\/Truffle_oil\">Truffle oil<\/a>\u00a0is used as a lower-cost and convenient substitute for truffles, to provide flavouring, or to enhance the flavour and aroma of truffles in cooking. Many &#8220;truffle oils&#8221;, however, do not contain any truffles, while others include pieces of one of the many inexpensive, unprized\u00a0<a style=\"color: #000000;\" href=\"https:\/\/en.wikipedia.org\/wiki\/List_of_Tuber_(fungus)_species\">truffle varietals<\/a>, which have no culinary value simply for show.\u00a0The vast majority is oil that has been artificially flavoured using a synthetic agent such as\u00a0<a style=\"color: #000000;\" href=\"https:\/\/en.wikipedia.org\/wiki\/2,4-dithiapentane\">2,4-dithiapentane<\/a>.<\/span><\/p><p><span style=\"color: #000000;\"><strong><u>3. TRUFFLE VODKA<\/u><\/strong><\/span><\/p><p><span style=\"color: #000000;\">Because more aromatic molecules in truffles are soluble in alcohol, it can be used to carry a more complex and accurate truffle flavour than oil without the need for synthetic flavourings. However, many commercial producers of &#8220;truffled&#8221; alcohol use 2,4-dithiapentane regardless, as it has become the dominant flavor most consumers, who have never been exposed to fresh truffles, but only truffle oils, associate with them. Because most Western nations do not have ingredient labeling requirements for spirits, consumers often have no way to know if additional flavorings have been used.\u00a0Although used as a spirit in its own right and mixed in a range of\u00a0<a style=\"color: #000000;\" href=\"https:\/\/en.wikipedia.org\/wiki\/Cocktail\">cocktails<\/a>, truffle-flavored alcohol is also used by chefs to flavour dishes.<\/span><\/p><h2><span style=\"color: #000000;\"><strong><u>TRUFFLE RECIPES<\/u><\/strong><\/span><\/h2><p><span style=\"color: #000000;\"><strong><u>BLACK TRUFFLE PASTA<\/u><\/strong><\/span><\/p><ul><li><span style=\"color: #000000;\">Fresh Tagliatelle, 400g<\/span><\/li><li><span style=\"color: #000000;\">Garlic, 2 cloves<\/span><\/li><li><span style=\"color: #000000;\">Cream, 250 ml<\/span><\/li><li><span style=\"color: #000000;\">Truffle olive oil (or regular olive oil)<\/span><\/li><li><span style=\"color: #000000;\">Truffles, 20g<\/span><\/li><li><span style=\"color: #000000;\">Parmesan cheese<\/span><\/li><li><span style=\"color: #000000;\">Butter<\/span><\/li><\/ul><p><span style=\"color: #000000;\"><strong>METHOD:<\/strong><\/span><\/p><ol><li><span style=\"color: #000000;\">Cook pasta in salted water until al dente.<\/span><\/li><li><span style=\"color: #000000;\">Heat the butter in a pan, add finely minced garlic and\u00a0cream and cook slowly.<\/span><\/li><li><span style=\"color: #000000;\">Cut 5-7 g of the truffle and add it to the pan too, cooking for 2 minutes.<\/span><\/li><li><span style=\"color: #000000;\">Blend pasta with this cream sauce and serve it with parmesan cheese, oil and truffle slices on the top.<\/span><\/li><\/ol><p><span style=\"color: #000000;\"><strong><u>RISOTTO WITH TRUFFLES<\/u><\/strong><\/span><\/p><ul><li><span style=\"color: #000000;\">Rice Carnaroli, 400g<\/span><\/li><li><span style=\"color: #000000;\">Shallot<\/span><\/li><li><span style=\"color: #000000;\">White wine, 100ml<\/span><\/li><li><span style=\"color: #000000;\">Truffles, 20g<\/span><\/li><li><span style=\"color: #000000;\">Butte, 40g<\/span><\/li><li><span style=\"color: #000000;\">Olive oil<\/span><\/li><li><span style=\"color: #000000;\">Parmesan cheese<\/span><\/li><li><span style=\"color: #000000;\">Vegetable broth (as much as needed)<\/span><\/li><\/ul><p><span style=\"color: #000000;\"><strong>\u00a0METHOD:<\/strong><\/span><\/p><ol><li><span style=\"color: #000000;\">Heat the butter in a pan, add finely minced shallot and stir shortly.<\/span><\/li><li><span style=\"color: #000000;\">Add the rice and stir shortly again.\u00a0<\/span><\/li><li><span style=\"color: #000000;\">Add the wine and cook until it evaporates.<\/span><\/li><li><span style=\"color: #000000;\">Add half a cup of broth and stir.<\/span><\/li><li><span style=\"color: #000000;\">When the liquid has been absorbed, add the broth and cook until al dente.<\/span><\/li><li><span style=\"color: #000000;\">We can add a little bit of cream and butter and parmesan cheese and leave it for a while. Serve with truffle slices on the top.<\/span><\/li><\/ol><p><span style=\"color: #000000;\"><strong><u>SCRAMBLED EGGS WITH BLACK TRUFFLES<\/u><\/strong><\/span><\/p><ul><li><span style=\"color: #000000;\">Olive oil<\/span><\/li><li><span style=\"color: #000000;\">Truffle slices<\/span><\/li><li><span style=\"color: #000000;\">Eggs<\/span><\/li><li><span style=\"color: #000000;\">Cream<\/span><\/li><li><span style=\"color: #000000;\">Sea salt<\/span><\/li><li><span style=\"color: #000000;\">Freshly ground black pepper<\/span><\/li><\/ul><p><span style=\"color: #000000;\"><strong>METHOD:<\/strong><\/span><\/p><ol><li><span style=\"color: #000000;\">Beat eggs in a bowl with a little bit of cream and stir.\u00a0<\/span><\/li><li><span style=\"color: #000000;\">Heat the oil in a saucepan and add the eggs with cream.<\/span><\/li><li><span style=\"color: #000000;\">Sprinkle with salt and black pepper and add the slivers of truffle in the end.<\/span><\/li><li><span style=\"color: #000000;\">Serve with French baguette and farmhouse butter.<\/span><\/li><\/ol>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/section>\n\t\t\t\t<\/div>\n\t\t","protected":false},"excerpt":{"rendered":"<p>USES OF TRUFFLES Because of their high price and their pungent aroma, truffles are used sparingly.
