truffle<\/span><\/li><li><span style=\"color: #000000;\">Summer or Burgundy truffle<\/span><\/li><li><span style=\"color: #000000;\">White truffle<\/span><\/li><\/ul><p><span style=\"color: #000000;\"><strong>Black truffle<\/strong><\/span><\/p><p><span style=\"color: #000000;\">Black P\u00e9rigord truffle, cross-section<\/span><\/p><p><span style=\"color: #000000;\">The black truffle or black P\u00e9rigord truffle (<em>Tuber melanosporum<\/em>), the second-most commercially valuable species, is named after the\u00a0<a style=\"color: #000000;\" href=\"https:\/\/en.wikipedia.org\/wiki\/P%C3%A9rigord\">P\u00e9rigord<\/a>\u00a0region in France. Black truffles associate with\u00a0<a style=\"color: #000000;\" href=\"https:\/\/en.wikipedia.org\/wiki\/Oak\">oaks<\/a>,\u00a0<a style=\"color: #000000;\" href=\"https:\/\/en.wikipedia.org\/wiki\/Hazel\">hazelnut<\/a>, cherry, and other deciduous trees and are harvested in late autumn and winter.\u00a0The genome sequence of the black truffle was published in March 2010.<\/span><\/p><p><span style=\"color: #000000;\"><strong>Summer or burgundy truffle<\/strong><\/span><\/p><p><span style=\"color: #000000;\">Summer truffles in a shop in Rome<\/span><\/p><p><span style=\"color: #000000;\">The black summer truffle (<em>Tuber aestivum<\/em>) is found across Europe and is prized for its culinary value.\u00a0Burgundy truffles (designated\u00a0<a style=\"color: #000000;\" href=\"https:\/\/en.wikipedia.org\/wiki\/Tuber_uncinatum\"><em>Tuber uncinatum<\/em><\/a>, but the same species) are harvested in autumn until December and have aromatic flesh of a darker colour. These associate with various trees and shrubs.<\/span><\/p><p><span style=\"color: #000000;\"><strong>White truffle<\/strong><\/span><\/p><p><span style=\"color: #000000;\">White truffle washed and corner cut to show interior.<\/span><\/p><p><span style=\"color: #000000;\"><a style=\"color: #000000;\" href=\"https:\/\/en.wikipedia.org\/wiki\/Tuber_magnatum\"><em>Tuber magnatum<\/em><\/a>, the high-value white truffle or\u00a0<em>trifola d&#8217;Alba Madonna<\/em>\u00a0(&#8220;Truffle of the White Madonna&#8221; in Italian) is found mainly in the\u00a0<a style=\"color: #000000;\" href=\"https:\/\/en.wikipedia.org\/wiki\/Langhe\">Langhe<\/a>\u00a0and\u00a0<a style=\"color: #000000;\" href=\"https:\/\/en.wikipedia.org\/wiki\/Montferrat\">Montferrat<\/a>\u00a0areas\u00a0of the\u00a0<a style=\"color: #000000;\" href=\"https:\/\/en.wikipedia.org\/wiki\/Piedmont\">Piedmont<\/a>\u00a0region in northern\u00a0<a style=\"color: #000000;\" href=\"https:\/\/en.wikipedia.org\/wiki\/Italy\">Italy<\/a>, and most famously, in the countryside around the cities of\u00a0<a style=\"color: #000000;\" href=\"https:\/\/en.wikipedia.org\/wiki\/Alba,_(CN)\">Alba<\/a>\u00a0and\u00a0<a style=\"color: #000000;\" href=\"https:\/\/en.wikipedia.org\/wiki\/Asti\">Asti<\/a>. A large percentage of Italy&#8217;s white truffles also come from\u00a0<a style=\"color: #000000;\" href=\"https:\/\/en.wikipedia.org\/wiki\/Molise\">Molise<\/a>.<\/span><\/p><p><span style=\"color: #000000;\"><strong>Whitish truffle<\/strong><\/span><\/p><p><span style=\"color: #000000;\">The &#8220;<a style=\"color: #000000;\" href=\"https:\/\/en.wikipedia.org\/wiki\/Whitish_truffle\">whitish truffle<\/a>&#8221; (<em>Tuber borchii<\/em>) is a similar species found in\u00a0<a style=\"color: #000000;\" href=\"https:\/\/en.wikipedia.org\/wiki\/Tuscany\">Tuscany<\/a>,\u00a0<a style=\"color: #000000;\" href=\"https:\/\/en.wikipedia.org\/wiki\/Abruzzo\">Abruzzo<\/a>,\u00a0<a style=\"color: #000000;\" href=\"https:\/\/en.wikipedia.org\/wiki\/Romagna\">Romagna<\/a>,\u00a0<a style=\"color: #000000;\" href=\"https:\/\/en.wikipedia.org\/wiki\/Umbria\">Umbria<\/a>, the\u00a0<a style=\"color: #000000;\" href=\"https:\/\/en.wikipedia.org\/wiki\/Marche\">Marche<\/a>, and\u00a0<a style=\"color: #000000;\" href=\"https:\/\/en.wikipedia.org\/wiki\/Molise\">Molise<\/a>. It is not as aromatic as those from Piedmont, although those from\u00a0<a style=\"color: #000000;\" href=\"https:\/\/en.wikipedia.org\/wiki\/Citt%C3%A0_di_Castello\">Citt\u00e0 di Castello<\/a>\u00a0come quite close.<\/span><\/p><p><span style=\"color: #000000;\"><strong><em>Geopora<\/em><\/strong><strong>\u00a0species<\/strong><\/span><\/p><p><span style=\"color: #000000;\"><a style=\"color: #000000;\" href=\"https:\/\/en.wikipedia.org\/wiki\/Geopora\"><em>Geopora<\/em><\/a>\u00a0spp. are important ectomycorrhizal partners of trees in woodlands and forests throughout the world.<em> Pinus edulis<\/em>, a widespread pine species of the Southwest US, is dependent on\u00a0<em>Geopora<\/em>\u00a0for nutrient and water acquisition in arid environments. Like other truffle fungi,\u00a0<em>Geopora<\/em>\u00a0produces subterranean\u00a0<a style=\"color: #000000;\" href=\"https:\/\/en.wikipedia.org\/wiki\/Sporocarp_(fungi)\">sporocarps<\/a>\u00a0as a means of sexual reproduction. <a style=\"color: #000000;\" href=\"https:\/\/en.wikipedia.org\/wiki\/Geopora_cooperi\"><em>Geopora cooperi<\/em><\/a>, also known as pine truffle or fuzzy truffle, is an edible species of this genus.<a style=\"color: #000000;\" href=\"https:\/\/en.wikipedia.org\/wiki\/Truffle#cite_note-L%C3%A6ss%C3%B8e_2007-1\"><sup>[1]<\/sup><\/a><\/span><\/p><p><span style=\"color: #000000;\"><strong>Other species<\/strong><\/span><\/p><p><span style=\"color: #000000;\">A less common truffle is &#8220;garlic truffle&#8221; (<a style=\"color: #000000;\" href=\"https:\/\/en.wikipedia.org\/wiki\/Tuber_macrosporum\"><em>Tuber macrosporum<\/em><\/a>).<\/span><\/p><p><span style=\"color: #000000;\">In the U.S.\u00a0<a style=\"color: #000000;\" href=\"https:\/\/en.wikipedia.org\/wiki\/Pacific_Northwest\">Pacific Northwest<\/a>, several species of truffle are harvested both recreationally and commercially, most notably, the\u00a0<em><a style=\"color: #000000;\" href=\"https:\/\/en.wikipedia.org\/wiki\/Leucangium\">Leucangium carthusianum<\/a><\/em>, Oregon black truffle;\u00a0<a style=\"color: #000000;\" href=\"https:\/\/en.wikipedia.org\/wiki\/Tuber_gibbosum\"><em>Tuber gibbosum<\/em><\/a>, Oregon spring white truffle; and\u00a0<a style=\"color: #000000;\" href=\"https:\/\/en.wikipedia.org\/wiki\/Tuber_oregonense\"><em>Tuber oregonense<\/em><\/a>, the Oregon winter white truffle.\u00a0<em><a style=\"color: #000000;\" href=\"https:\/\/en.wikipedia.org\/wiki\/Kalapuya_brunnea\">Kalapuya brunnea<\/a><\/em>, the Oregon brown truffle, has also been commercially harvested and is of culinary note.<\/span><\/p><p><span style=\"color: #000000;\">The\u00a0<a style=\"color: #000000;\" href=\"https:\/\/en.wikipedia.org\/wiki\/Pecan_truffle\">pecan truffle<\/a>\u00a0(<em>Tuber lyonii<\/em>) syn.\u00a0<em>texense<\/em>\u00a0is found in the\u00a0<a style=\"color: #000000;\" href=\"https:\/\/en.wikipedia.org\/wiki\/Southern_United_States\">Southern United States<\/a>, usually associated with\u00a0<a style=\"color: #000000;\" href=\"https:\/\/en.wikipedia.org\/wiki\/Pecan\">pecan<\/a>\u00a0trees. Chefs who have experimented with them agree &#8220;they are very good and have potential as a food commodity&#8221;. Although pecan farmers used to find them along with pecans and discard them, considering them a nuisance, they sell for about $160 a pound and have been used in some gourmet restaurants.<\/span><\/p><p><span style=\"color: #000000;\"><strong><u>PRESERVATION OF TRUFFLES<\/u><\/strong><\/span><\/p><p><span style=\"color: #000000;\">It is important to wash truffles from clay carefully every time.\u00a0 There is no need to peel them. We only cut off the very soft parts. What may happen is that white mold appears on the surface of truffles while preserving them in the fridge. It is not a problem. Clean the mold on the truffles with a brush and cold water. Then you can eat the truffles without any problems. Don\u00b4t eat too soft truffles from which the fluid flows out.<\/span><br \/><span style=\"color: #000000;\">Dried truffles can be stored in the fridge on a paper napkin or rice that absorbs excessive moisture. Another way to store truffles is freezing, but then truffles will lose a lot of their flavour, lose their structure and cannot be sliced thinly. In order to partially eliminate this effect, wrap truffles in a plastic bag and chill in a jar. The second way to keep the flavour is to freeze truffles in olive oil or goose lard.
