VARIETIES OF BACON\/CUTS AND USES OF BACON<\/strong><\/span><\/p>

  1. SLICED BACON<\/span><\/li>
  2. SLAB BACON<\/span><\/li>
  3. COUNTRY CURED BACON<\/span><\/li>
  4. CANADIAN BACON<\/span><\/li>
  5. PEA MEAL BACON<\/span><\/li>
  6. SCHINKENSPECK (HAM-BACON)<\/span><\/li><\/ol>

    SLICED BACON:<\/strong><\/span><\/p>

    It is from hog bellies which have been squared off. They are cured and most often smoked, sliced thin, and then packaged for retail sale.<\/span><\/p>

    SLAB BACON:<\/strong><\/span><\/p>

    It is unsliced version of sliced bacon. It has a longer shelf life.<\/span><\/p>

    COUNTRY CURED BACON:<\/strong><\/span><\/p>

    It has a salty, very strong flavour. It is more expensive than slab bacon.<\/span><\/p>

    CANADIAN BACON:<\/strong><\/span><\/p>

    It is processed in the same manner as slab bacon. Except it is made from the eye of the loin. It is fully cooked and smoked. It is more like ham than bacon & is very lean.<\/span><\/p>

    PEA MEAL BACON:<\/strong><\/span><\/p>

    It is a form of Canadian bacon that is not smoked after curing it is dried briefly and coated with yellow cornmeal.<\/span><\/p>

    SCHINKENSPECK (HAM-BACON):<\/strong><\/span><\/p>

    It is a German preparation, processed like bacon.
