They come in many forms consisting of liquids, powders, gels, and pastes.\u00a0<b>Food coloring<\/b>\u00a0is used both in commercial\u00a0<b>food<\/b>\u00a0production and in domestic cooking.<\/span><\/p><p><span style=\"color: #000000;\">A number of food colourings are obtained in either powder or liquid form.\u00a0<\/span><\/p><p><span style=\"color: #000000;\">it can be divided into two categories:<\/span><\/p><ol><li><span style=\"color: #000000;\">Natural colouring agents<\/span><\/li><li><span style=\"color: #000000;\">Artificial colouring agents<\/span><\/li><\/ol><p><span style=\"color: #000000;\"><strong>\u00a0NATURAL COLOURING AGENTS:<\/strong><\/span><\/p><ol><li><span style=\"color: #000000;\"><strong>Cochineal:<\/strong> It is a red colour, produced from the cochineal beetle. it is used in pastry and confectionery work.<\/span><\/li><li><span style=\"color: #000000;\"><strong>Green colouring: <\/strong>This can be made by mixing indigo, and saffron, but chlorophyll, the natural green colouring of plants, such as in spinach, may also be used.<\/span><\/li><li><span style=\"color: #000000;\"><strong>Indigo:\u00a0<\/strong> This is the blue colour seldom used on its own, but which, when mixed with red, produces shades of mauve.<\/span><\/li><li><span style=\"color: #000000;\"><strong>Yellow colouring:\u00a0<\/strong>a deep yellow colour can be obtained from turmeric roots and is prepared in the form of a powder mainly used in curry and mustard pickles. Yellow is also obtained by using egg yolks or saffron.\u00a0<\/span><\/li><li><span style=\"color: #000000;\"><strong>Brown:<\/strong>\u00a0 Brown sugar is used to give a deep brown colour in rich fruit cakes, it is also added to enhance the flavour.<\/span><\/li><li><span style=\"color: #000000;\"><strong>Blackjack or Browning:\u00a0<\/strong> Blackjack or commercial caramel is a dark brown, almost black liquid and is used for colouring soups, sauces, gravies, aspics and in pastry and confectionery.<\/span><\/li><li><span style=\"color: #000000;\"><strong>Chocolate:<\/strong>\u00a0 this can be obtained in liquid or powder form, and is used in pastries and confectionery.<\/span><\/li><li><span style=\"color: #000000;\"><strong>Coffee colour:<\/strong>\u00a0 This is usually made from coffee beans with the addition of chicory.\u00a0<\/span><\/li><\/ol><p><span style=\"color: #000000;\"><strong>ARTIFICIAL COLOURING AGENTS<\/strong><\/span><\/p><p><span style=\"color: #000000;\">A large range of artificial colours are also obtainable, they are produced from coal tar and are haffilles. some mineral colours are also used in foodstuffs.
