It has a total size of 513,120\u00a0km<sup>2<\/sup>\u00a0(198,120\u00a0sq\u00a0mi) which is the 50th largest in the world. The land border is 4,863\u00a0km (3,022\u00a0mi) long with\u00a0<\/strong><strong><a style=\"color: #000000;\" href=\"https:\/\/en.wikipedia.org\/wiki\/Myanmar\">Myanmar<\/a><\/strong><strong>,\u00a0<\/strong><strong><a style=\"color: #000000;\" href=\"https:\/\/en.wikipedia.org\/wiki\/Cambodia\">Cambodia<\/a><\/strong><strong>,\u00a0<\/strong><strong><a style=\"color: #000000;\" href=\"https:\/\/en.wikipedia.org\/wiki\/Laos\">Laos<\/a><\/strong><strong>\u00a0and\u00a0<\/strong><strong><a style=\"color: #000000;\" href=\"https:\/\/en.wikipedia.org\/wiki\/Malaysia\">Malaysia<\/a><\/strong><strong>.\u00a0<\/strong><\/span><\/li><li><span style=\"color: #000000;\"><strong>A fertile floodplain and tropical monsoon climate, ideally suited to wet-rice (<em>tham na<\/em>) cultivation, attracted settlers to this central area in preference to the marginal uplands and the\u00a0<a style=\"color: #000000;\" href=\"https:\/\/en.wikipedia.org\/wiki\/Thai_highlands\">highlands<\/a>of the northern region or the\u00a0<a style=\"color: #000000;\" href=\"https:\/\/en.wikipedia.org\/wiki\/Khorat_Plateau\">Khorat Plateau<\/a>\u00a0to the northeast.<\/strong><\/span><\/li><li><span style=\"color: #000000;\"><strong>By the 11th century AD, a number of loosely connected rice-growing and trading states flourished in the upper Chao Phraya Valley. They broke free from domination of the\u00a0<a style=\"color: #000000;\" href=\"https:\/\/en.wikipedia.org\/wiki\/Khmer_Empire\">Khmer Empire<\/a>, but from the middle of the 14th century gradually came under the control of the\u00a0<a style=\"color: #000000;\" href=\"https:\/\/en.wikipedia.org\/wiki\/Ayutthaya_Kingdom\">Ayutthaya Kingdom<\/a>at the southern extremity of the floodplain.<\/strong><\/span><\/li><li><span style=\"color: #000000;\"><strong>Successive capitals, built at various points along the river, became centers of great Thai kingdoms based on rice cultivation and foreign commerce. Unlike the neighboring\u00a0<a style=\"color: #000000;\" href=\"https:\/\/en.wikipedia.org\/wiki\/Khmer_people\">Khmer<\/a>and\u00a0<a style=\"color: #000000;\" href=\"https:\/\/en.wikipedia.org\/wiki\/Bamar\">Burmese<\/a>, the Thai continued to look outward across the\u00a0<a style=\"color: #000000;\" href=\"https:\/\/en.wikipedia.org\/wiki\/Gulf_of_Thailand\">Gulf of Thailand<\/a>\u00a0and the\u00a0<a style=\"color: #000000;\" href=\"https:\/\/en.wikipedia.org\/wiki\/Andaman_Sea\">Andaman Sea<\/a>\u00a0toward foreign ports of trade.<\/strong><\/span><\/li><li><span style=\"color: #000000;\"><strong><a style=\"color: #000000;\" href=\"https:\/\/en.wikipedia.org\/wiki\/Northern_Thailand\">Northern Thailand<\/a><\/strong><strong>is a\u00a0<\/strong><strong><a style=\"color: #000000;\" href=\"https:\/\/en.wikipedia.org\/wiki\/Mountainous\">mountainous<\/a><\/strong><strong> Parallel mountain ranges extend from the\u00a0<\/strong><strong><a style=\"color: #000000;\" href=\"https:\/\/en.wikipedia.org\/wiki\/Daen_Lao_Range\">Daen Lao Range<\/a><\/strong><strong>\u00a0(<\/strong><strong>\u0e17\u0e34\u0e27\u0e40\u0e02\u0e32\u0e41\u0e14\u0e19\u0e25\u0e32\u0e27<\/strong><strong>), in the southern region of the\u00a0<\/strong><strong><a style=\"color: #000000;\" href=\"https:\/\/en.wikipedia.org\/wiki\/Shan_Hills\">Shan Hills<\/a><\/strong><strong>, in a north-south direction, the\u00a0<\/strong><strong><a style=\"color: #000000;\" href=\"https:\/\/en.wikipedia.org\/wiki\/Dawna_Range\">Dawna Range<\/a><\/strong><strong>\u00a0(<\/strong><strong>\u0e17\u0e34\u0e27\u0e40\u0e02\u0e32\u0e14\u0e2d\u0e22\u0e21\u0e2d\u0e19\u0e01\u0e38\u0e08\u0e39<\/strong><strong>) forming the western border of Thailand between\u00a0<\/strong><strong><a style=\"color: #000000;\" href=\"https:\/\/en.wikipedia.org\/wiki\/Mae_Hong_Son\">Mae Hong Son<\/a><\/strong><strong>\u00a0and the\u00a0<\/strong><strong><a style=\"color: #000000;\" href=\"https:\/\/en.wikipedia.org\/wiki\/Salween_River\">Salween River<\/a><\/strong><\/span><\/li><li><span style=\"color: #000000;\"><strong>The northeast, with its poor soils, is not favoured agriculturally. However, sticky rice, the staple food of the region, which requires flooded, poorly drained paddy fields, thrives and where fields can be flooded from nearby streams, rivers and ponds, often two harvests are possible each year. Cash crops such as sugar cane and\u00a0<\/strong><strong><a style=\"color: #000000;\" href=\"https:\/\/en.wikipedia.org\/wiki\/Manioc\">manioc<\/a><\/strong><strong>are cultivated on a vast scale, and to a lesser extent, rubber.<\/strong><\/span><\/li><li><span style=\"color: #000000;\"><strong>Thai cooking places emphasis on lightly prepared dishes with strong aromatic components and a spicy edge. <\/strong><\/span><\/li><li><span style=\"color: #000000;\"><strong>No complicated cooking techniques or equipments were used to cook. Staple food is rice.<\/strong><\/span><\/li><li><span style=\"color: #000000;\"><strong>Cooking techniques were influenced by the cuisines of China, India, Laos and Malaysia.<\/strong><\/span><\/li><li><span style=\"color: #000000;\"><strong>Thai food was traditionally eaten with the right hand while seated on mats or carpets on the floor, a custom still found in the more traditional households. Today, however, most eat with a fork &amp; spoon or Chopsticks.<\/strong><\/span><\/li><\/ul><p><span style=\"color: #000000;\"><strong><u>THAI MEAL COMPOSITION<\/u><\/strong><\/span><\/p><ul><li><span style=\"color: #000000;\"><strong>Tidbits : hors d\u2019oeuvres or starters.<\/strong><\/span><\/li><li><span style=\"color: #000000;\"><strong>Salads : with herbal flavours and dips.<\/strong><\/span><\/li><li><span style=\"color: #000000;\"><strong>General fare : a sweet and sour dish.<\/strong><\/span><\/li><li><span style=\"color: #000000;\"><strong>Soups : made of beans or other foods.<\/strong><\/span><\/li><li><span style=\"color: #000000;\"><strong>Curries : simple and complex.<\/strong><\/span><\/li><li><span style=\"color: #000000;\"><strong>Single dishes : rice and noodles dishes.<\/strong><\/span><\/li><li><span style=\"color: #000000;\"><strong>Dessert : sweets or fruits.<\/strong><\/span><\/li><\/ul><p><span style=\"color: #000000;\"><strong>\u00a0<\/strong><strong>They have the custom of serving foods with bread and wine is had with the food.<\/strong><\/span><\/p><p><span style=\"color: #000000;\"><strong><u>\u00a0<\/u><\/strong><strong><u>FAMOUS DISHES<\/u><\/strong><\/span><\/p><ul><li><span style=\"color: #000000;\">Khanomchin<strong>, freshly made Thai rice noodles.<\/strong><\/span><\/li><li><span style=\"color: #000000;\">Khaoniao<strong>(sticky rice), served with somtam (papaya salad) andkaiyang (grilled chicken) as part of a typical Isanmeal.<\/strong><\/span><\/li><li><span style=\"color: #000000;\">SomTam salad<strong>is a spicy salad made from shredded unripeRaw papaya.<\/strong><\/span><\/li><li><span style=\"color: #000000;\">Red curry <strong>kaengphet, (lit: spicy soup) is a popular Thai dish consisting of red curry paste cooked in coconut milk and added with meat; such as chicken, beef, pork, duck or shrimp, or tofu.<\/strong><\/span><\/li><li><span style=\"color: #000000;\">Green curry kaeng khiao wan<strong>-(lit: <\/strong>sweet green curry<strong>) is a Central Thai variety of curry.
